CAJUN-STYLE STEAK AND CHIPS WITH FRUIT SAUCE

Ingredients for 4

  • 4 large chipping potatoes (e.g. Rooster or Maris Piper) (approximately 600g), peeled and cut into 1cm thick chips
  • 2 teasp. rapeseed or olive oil
  • 2 tablesp. Cajun, Texas or Creole spices
  • 4 sirloin steaks
  • 1 mango, peeled and sliced
  • 1 lime, juice and zest
  • 1 peach, peeled and sliced

To Serve

  • Green salad

An original recipe that revisits homemade chips with a Texan and Creole influenced seasoning and a mango and peach sauce.

  1. Preheat the oven to Gas Mark 6, 200°C (400°F).
  2. Place the chips on a baking sheet in a single layer. Add oil and spices and toss to coat the chips evenly. Put them in the oven and cook them for about 20 minutes, until they are crispy.
  3. Meanwhile, prepare the fruit sauce: mix together the mango, lime and peach.
  4. In a very hot pan, grill the steaks.
  5. Arrange them on a plate, cover with the fruit sauce and add the chips.

To Serve,

  1. Serve with a green salad.
