CREAM OF POTATO, COCONUT AND VANILLA SOUP

Ingredients for 4

  • 5 potatoes for soup (e.g. Rooster potatoes) (approximately 600 g)
  • 1 leek
  • 1 onion
  • 25 g butter
  • ½ vanilla pod
  • 100 ml coconut milk
  • 600 ml water
  • Salt and pepper (seasoning)
  • Parsley, chopped (optional)

Preparation time: 10 MIN Cooking time: 15 MIN
  1. Wash and peel the potatoes. Peel the onion. Finely chop the leek and onion.
  2. Finely chop the potatoes.
  3. Heat the butter in a saucepan. Add the leek and onion. Cook for 3-4 minutes.
  4. Add the water, then the potatoes. Add the vanilla pod split in two.
  5. Season with salt and pepper.
  6. Cook for 15 minutes.
  7. Remove the vanilla pod. Pour in the coconut milk and blend. Add a little water if necessary.
  8. Serve hot or chilled.
  9. Optional: serve with a handful of chopped parsley.
