Ingredients for 4

  • 5 large, waxy potatoes (e.g. Rooster potatoes)
  • 750 ml tomato sauce
  • 200 g fresh spinach (or 150 g frozen spinach)
  • A few twigs flat leaf parsley
  • 2 eggs
  • 500 g minced meat
  • 70 g breadcrumbs
  • 2 shallots
  • 50 g butter
  • Salt and pepper (seasoning)

  1. Peel the potatoes and cook them for 10 minutes in a little water in a microwave at 750 watts.
  2. Heat half the butter in a wok and fry the finely chopped shallots.
  3. Add the spinach, season with salt and pepper and leave to cook.
  4. Drain the liquid and finely chop the spinach. Mix the spinach with the minced meat, breadcrumbs, and eggs. Season with salt and pepper.
  5. Make small balls of the minced meat and cook them for 10 minutes in the tomato sauce on low heat.
  6. In the meantime, mash the potatoes with the rest of the butter and the chopped parsley. Season with salt and pepper. Serve with the meatballs.
