- Peel and wash the potatoes and carrots. Boil them for about 15-20 minutes once the water comes to the boil, the vegetables should be tender. Drain.
- Mash the potatoes and carrots to obtain a purée. Set aside.
- Mince the onion and cut the bacon into strips.
- Fry the onion in a hot frying pan, then add the bacon and leave it to cook until it is nicely browned.
- Mix the purée with the onions and bacon, add pepper and season if necessary.
- Use two spoons to form croquettes. Keep in a cool place.
- Beat the eggs in a dish and pour the breadcrumbs onto a plate.
- Dip the croquettes in the eggs and then in the breadcrumbs, repeat the operation if necessary.
- Fry the croquettes for about 4 minutes in hot oil.
- Serve with some mayonnaise
