Ingredients for 4

  • 1 big potato (e.g. Rooster potatoes) (approximately 250 g)
  • 250 g flour
  • 125 g soft butter
  • 2 eggs
  • 1 tbsp or small sachet of baking powder
  • 80 g powdered sugar
  • 1 vanilla pod
  • 250 g of mixed berries (fresh or frozen)
  • red fruit coulis
  • 2 tbsp icing sugar

A mouth-watering recipe with sweet flavours, which combines potato in a dish balanced with the acidity of fresh red fruit.

  1. Peel the potato and place them in a pan of salted boiling water and cook for 20 to 25 minutes.
  2. Mash it with a fork, add the butter and stir.
  3. Open the vanilla pod in half lengthwise, scoop out the beans with a knife and add them to the preparation. Pour in the sugar and beaten eggs and mix well.
  4. Gently stir in the flour and baking powder and mix until you obtain a homogeneous batter.
  5. Leave to stand for about 1 hour.
  6. Heat the waffle iron. Grease it lightly, add the batter and cook for about 4 to 5 minutes.
  7. Place a few berries on the waffle and sprinkle with icing sugar just before serving.
  8. Serve your potato waffles with a red fruit coulis.
