Ingredients for 4

  • 400 g Rooster potatoes
  • 70 g grated cheddar
  • 70 g cooked ham, cut into cubes
  • 2 eggs
  • 2 tbsp fresh chives, finely chopped
  • Olive oil
  • Salt and pepper

Toppings for meal prep:

  • Hummus and rocket
  • Chicken and courgetti
  • Ricotta, lemon zest and tomato

Preparation time: 20 MIN Cooking time: 15 MIN
  1. Coarsely grate the potatoes and add to a bowl of ice cold water. Leave for 10 minutes.
  2. Place in a muslin cloth and strain, squeeze until all the water is out.
  3. In a bowl add the grated potatoes, grated cheddar, cooked ham, eggs and fresh chives. Add salt and pepper and mix thoroughly.
  4. Heat a waffle iron, bake the waffles until crispy.
  5. Serve each day with a different topping. Just heat the waffle in a preheated oven (180°C) for 6 minutes.


Make your own hummus: Mix chickpeas, olive oil, fresh herbs, tahini paste, garlic and cumin together until smooth. Season with salt and pepper, enjoy!
