Ingredients for 4

  • 4 floury potatoes (e.g. Rooster) and 4 mashed potatoes (approximately 700g)
  • 4 eggs
  • 500g flour
  • 440ml milk
  • Butter
  • Crème fraiche
  • 100g smoked salmon
  • Lemon
  • Watercress
  • Salt

  1. Grate the raw potatoes.
  2. Place the raw potatoes in a towel and squeeze them to extract all the moisture. The recipe is made of one third raw potatoes, one third cooked potatoes and one third flour.
  3. Season the mixture with salt and add one egg.
  4. Add some mashed potatoes (equal quantity to the raw potatoes) to the mixture.
  5. Add some flour (equal quantity to the mashed potatoes) and some milk (a little at a time).
  6. Melt some butter in a pan over a medium heat.
  7. Spoon and spread the mixture into medium-sized pieces in the frying pan.
  8. Let the boxty cook for 3-4 minutes on each side until it’s brown on both sides
  9. Add some crème fraiche and chopped smoked salmon to the boxty and season with black pepper
  10. Finish with a squeeze of lemon and some watercress
