  • 3 potatoes (e.g. Rooster potatoes) (approximately 400 g)
  • 4 leeks
  • 8 eggs
  • 5 tbsp olive oil
  • Handful of grated cheese
  • salt and pepper

  1. Wash the potatoes thoroughly and cut into wedges.
  2. Heat the olive oil in a large frying pan and fry the potato wedges for 20 minutes. Stir regularly.
  3. Wash and cut the leeks into thin rings. Add to the potatoes, season with salt and pepper and cook for 10 minutes.
  4. Beat the eggs, season with salt and pepper and pour over the vegetables.
  5. Sprinkle with grated cheese. Allow the egg to set and the cheese to melt.
