- 3 potatoes (e.g. Rooster potatoes) (approximately 400 g)
- 4 leeks
- 8 eggs
- 5 tbsp olive oil
- Handful of grated cheese
- salt and pepper

- Wash the potatoes thoroughly and cut into wedges.
- Heat the olive oil in a large frying pan and fry the potato wedges for 20 minutes. Stir regularly.
- Wash and cut the leeks into thin rings. Add to the potatoes, season with salt and pepper and cook for 10 minutes.
- Beat the eggs, season with salt and pepper and pour over the vegetables.
- Sprinkle with grated cheese. Allow the egg to set and the cheese to melt.
