Wash the potato and chop it into small bite-sized cubes. Boil the cubes in salted water for 8 minutes. Drain and place in a bowl.
In the meantime, finely chop the red onion and coriander. Cut the canned pineapple, avocado and tomatoes into small cubes. Add all the ingredients to the potato bowl and mix to combine. Add the juice from ½ lime and season to taste with salt and pepper.
Bring a pan of water to the boil. Add the sausages and cook for 5 minutes.
Make a notch in the buns at the top, place a sausage in it and fill with the potato salsa. Finish with your favourite sauce and serve with extra salsa.
