SLICED POTATO AND COURGETTE WITH LEMON- ROASTED FISH

Cut baking paper to fit into the bottom of the air fryer tray or into the bottom of an oven dish and place it in the basket or dish.
Cut the potatoes and courgettes into thin slices, using a mandoline (or knife).
Place the potato and courgette slices onto the baking paper, overlapping each other. Drizzle with olive oil and season with salt and pepper.
Cut one half of the lemon into slices and juice the other half.
Place the fish in the air fryer basket or oven dish next to the vegetables, season with salt and pepper,and top each fillet of fish with lemon slices.
Cook in the air fryer at 160°C for 20 minutes or in the oven at 180°C for 20-25 minutes. If your fish filets are slightly flatter or thinner, reduce the cooking time.
Slice the tomato into cubes and finely chop the parsley.
Add the tomato and parsley to a bowl and drizzle with olive oil and lemon juice to create the salsa. Season with salt and pepper.
Serve the fish and vegetables with the tomato salsa.
