ORIENTAL POTATO SALAD

Ingredienti per 4 persone

  • 4 medium floury potatoes (e.g. Rooster) (approximately 800g) for steaming/baking
  • 12 cherry tomatoes, halved
  • 1 scallion with stem, finely chopped
  • 1 teasp. ground cumin
  • 1 tablesp. slivered almonds
  • 1 teasp. rapeseed or olive oil

Cottura: 40 MIN
  1. Place the potatoes into a pan of salted water and cook for 20 minutes from boiling point.
  2. Peel the potatoes and cut them into slices. Add the ground cumin and mix.
  3. Roast the slivered almonds in a hot frying pan.
  4. Mix the potatoes, cherry tomatoes and chopped scallion in a bowl.
  5. Drizzle with oil, sprinkle with roasted slivered almonds and enjoy without further ado!
