- Wash the potatoes then place them in a pan of salted water and cook for 20 minutes after boiling.
- Peel and finely chop the shallot. Dice the herring fillets. Peel and dice the potatoes.
- Place the potatoes, herring, apples and shallot in a bowl and mix.
- Prepare the sauce: put the salt, pepper and mustard in a bowl. Add the vinegar and oil and mix.
- Drizzle the sauce over the potato salad and serve with a mesclun salad.
