POTATO SALAD WITH HERRING AND GREEN APPLE

Ingredienti per 4 persone

  • 5 medium floury potatoes (e.g. Rooster) (approximately 800g) for steaming/baking
  • 1 shallot, peeled and finely chopped
  • 6 herring fillets
  • 2 green apples, peeled and chopped
  • 1 tablesp. of mustard
  • 1 tablesp. vinegar
  • 3 tablesp. rapeseed or olive oil
  • Mesclun salad
  • Salt and freshly ground black pepper

  1. Wash the potatoes then place them in a pan of salted water and cook for 20 minutes after boiling.
  2. Peel and finely chop the shallot. Dice the herring fillets. Peel and dice the potatoes.
  3. Place the potatoes, herring, apples and shallot in a bowl and mix.
  4. Prepare the sauce: put the salt, pepper and mustard in a bowl. Add the vinegar and oil and mix.
  5. Drizzle the sauce over the potato salad and serve with a mesclun salad.
