Ingredients for 4

  • 8 floury potatoes (e.g. Rooster potatoes) (approximately 800 g)
  • 2 peppers (red, green)
  • 1 lemon
  • 3 spring onions
  • a few sprigs of fresh thyme
  • a pinch of paprika
  • 1 drizzle of olive oil or rapeseed oil
  • salt
Cooking time: 60 MIN

A recipe that brings together the flavours of potato and peppers in a warming, comforting dish.

  1. Preheat the oven to 200°C (Gas 6).
  2. Wash the potatoes thoroughly.
  3. Prepare 8 sheets of baking paper.
  4. Place strips of red and green peppers and sliced onions on the sheets.
  5. Add slices of lemon and place a potato on the bed of vegetables.
  6. Season with salt, add fresh thyme and drizzle with olive oil.
  7. Close the papillotes and put in the oven for 45 to 50 minutes. Check the extent of cooking periodically using a knife.
  8. Finishing touch: Open the papillotes and sprinkle with a pinch of paprika just before serving.
