TEXAN-STYLE POTATO SCRAMBLE

Ingredients for 4

  • 800 g new potatoes (e.g. Queens potatoes)
  • 6 eggs
  • 4 tbsp sour cream
  • 2 tbsp olive oil
  • 2 shallots
  • 200 g red peppers
  • 200 g sweetcorn, fresh or frozen
  • 6 tbsp red beans
  • 2 tsp chilli powder
  • 100 g grated cheese to melt such as cheddar, mozzarella, etc. (optional)
  • Coriander, scallions / spring onion, spicy sauce, to serve

Preparation time: 5 MIN Cooking time: 15 MIN
  1. Peel the potatoes and cook them in a pan of salted water until tender. Drain and dry.
  2. Break the eggs and beat in the sour cream with a fork. Season with salt and pepper and set aside.
  3. Heat the oil in a pan over a medium-high heat. Cut the shallot and red pepper. Cook the shallot, pepper, and sweetcorn until soft.
  4. Add the potatoes, red beans, and chilli powder. Let it cook for a while.
  5. Fry the eggs in another pan with the cheese and the chili powder.
  6. Mix everything together
  7. Garnish with coriander, chopped scallions / spring onion, and spicy sauce to taste.
