Ingredients for 4

  • 2 medium floury potatoes (e.g. Rooster) (approximately 400g)
  • 2 tablesp. lime juice
  • 1 tablesp. fish sauce
  • ½ teasp. salt
  • 1 teasp. brown sugar
  • Zest of 1 lime
  • 1 small red or green chilli pepper, seeded and chopped
  • 1 scallion, finely chopped
  • 100ml coconut milk
  • ½ cucumber cut into thin sticks
  • 1 handful of peanuts

To Serve

  • Coriander

An exotic recipe that sublimates the taste of the potato with a Thai seasoning.

  1. Steam the potatoes for 20 minutes.
  2. Mix the lime juice and fish sauce in a bowl.
  3. Stir in the salt and sugar until the sugar dissolves, then add the lime zest, chilli, scallion and coconut milk. Mix well.
  4. Arrange the cooled, peeled and cubed potatoes in a bowl. Add the cucumber and pour on the vinaigrette.
  5. Sprinkle with peanuts and coriander and serve.
