THAI-STYLE POTATO SALAD

Składniki dla 4 porcji

  • 2 medium floury potatoes (e.g. Rooster) (approximately 400g)
  • 2 tablesp. lime juice
  • 1 tablesp. fish sauce
  • ½ teasp. salt
  • 1 teasp. brown sugar
  • Zest of 1 lime
  • 1 small red or green chilli pepper, seeded and chopped
  • 1 scallion, finely chopped
  • 100ml coconut milk
  • ½ cucumber cut into thin sticks
  • 1 handful of peanuts

To Serve:

  • Coriander

An exotic recipe that sublimates the taste of the potato with a Thai seasoning.

  1. Steam the potatoes for 20 minutes.
  2. Mix the lime juice and fish sauce in a bowl.
  3. Stir in the salt and sugar until the sugar dissolves, then add the lime zest, chilli, scallion and coconut milk. Mix well. Arrange the cooled, peeled and cubed potatoes in a bowl. Add the cucumber and pour on the vinaigrette. Sprinkle with peanuts and coriander and serve.
