An exotic recipe that sublimates the taste of the potato with a Thai seasoning.
Steam the potatoes for 20 minutes.
Mix the lime juice and fish sauce in a bowl.
Stir in the salt and sugar until the sugar dissolves, then add the lime zest, chilli, scallion and coconut milk. Mix well. Arrange the cooled, peeled and cubed potatoes in a bowl. Add the cucumber and pour on the vinaigrette. Sprinkle with peanuts and coriander and serve.
