BRANDADE OF COD AND POTATOES WITH SAGE AND CHORIZO OIL

Ingredients for 4

  • 6 medium-sized floury potatoes
  • 50 g butter
  • 300 g fillets of cod (hake, stockfish, mackerel, etc.)
  • 2 tbsp sage, chopped
  • 100 g chorizo, thinly sliced
  • Salt and pepper (seasoning)

  1. Peel the potatoes and boil them in salted water.
  2. Divide the fish into small pieces.
  3. Chop the sage finely and add to the fish. Fry the fish on a low heat in a knob of butter until done. Season with pepper and salt.
  4. Cut the chorizo into thin slices and fry until the fat is released.
  5. Mash the potatoes, fish and butter together. Add the sage, salt, and pepper.
  6. Serve the brandade with a little chorizo fat.
