- Boil the potatoes for roughly 20 minutes, until soft and cooked through.
- Allow them to cool.
- Using a blender or food processor, blend all the sauce ingredients until you have a smooth blend.
- Pour this mixture over the cooled, pre-cooked potatoes into a large serving bowl, making sure everything is evenly coated to get the most flavour!
- Add in the tomatoes, chilli and coriander and stir.
- Season with salt and pepper.
- Ready to serve
