GUACAMOLE POTATO SALAD

Ingredients for 4

  • 15-20 potatoes (e.g. Salad / Baby Potatoes or New Season) Queens (approximately 900g)
  • 2 red onions, sliced
  • 150 g cherry tomatoes
  • 1 red chilli, chopped
  • 30 g fresh coriander leaves, chopped

Sauce

  • 4 avocados, stoned, peeled and chopped into chunks
  • 4 tbsp olive oil
  • Juice of 3 lemons
  • 2 tbsp mayonnaise
  • 3 tbsp butter
  • 80 ml milk
  • Salt and pepper (seasoning)

Preparation time: 5 MIN Cooking time: 5 MIN
  1. Boil the potatoes for roughly 20 minutes, until soft and cooked through.
  2. Allow them to cool.
  3. Using a blender or food processor, blend all the sauce ingredients until you have a smooth blend.
  4. Pour this mixture over the cooled, pre-cooked potatoes into a large serving bowl, making sure everything is evenly coated to get the most flavour!
  5. Add in the tomatoes, chilli and coriander and stir.
  6. Season with salt and pepper.
  7. Ready to serve
