Ingredients for 4

  • 400g Rooster potatoes
  • 3 chicken breasts
  • 1 courgette
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 2 cloves of garlic
  • 1 tbsp chicken seasoning
  • A handful fresh parsley
  • Salt and pepper
  • Olive oil

  1. Preheat the oven to 200°C (or turn on the air fryer, line the basket with baking paper).
  2. Cut the potatoes into small cubes. Add to a bowl and drizzle with some olive oil. Season with salt and pepper and toss until everything is coated. Arrange in an oven dish lined with baking paper and place in the oven for 15 minutes (or place in the air fryer basket. Set the setting to ‘vegetables’ or ‘potatoes’ at 200°C, bake for 10 minutes, shaking halfway through).
  3. Meanwhile, cut the courgette, peppers, red onion, and chicken into equally bite-sized pieces. Finely chop the garlic. Add everything to a bowl, add the chicken seasoning, salt, and pepper. Drizzle with olive oil and toss everything together until well combined.
  4. Take the oven dish out of the oven and add the veggies and chicken on top of the potatoes. Return to the oven for 25 more minutes until everything is roasted (or remove the basket from the air fryer and add the veggies and chicken on top of the potatoes. Toss everything until combined and put back in the air fryer for 15 minutes, shaking halfway through).
  5. Serve immediately, garnished with chopped parsley. Enjoy!
