NEW POTATO AND PRAWN SKEWERS

Ingredients for 4

  • 8 salad/ baby potatoes (approximately 200g)
  • 30 prawns peeled
  • 150g cherry tomatoes
  • 1 teasp. fresh oregano, chopped
  • 1 tablesp. Rapeseed or olive oil
  • 200ml oregano tomato sauce
  • Salt

Cooking time: 40 MIN
  1. Wash the potatoes and cook them in a pan of salted water for 20 minutes. Check they are cooked with the tip of a knife.
  2. Allow the potatoes to cool.
  3. Cut them in half or slice them depending on the size of the potatoes.
  4. Slide a piece of potato onto a skewer, followed by a prawn and a cherry tomato. Repeat the operation a second time.
  5. Sprinkle with oregano and salt.
  6. Cook the skewers in a little oil in a frying pan and serve with a tomato coulis.

Summer version: Brush the skewers with olive oil and cook them on the barbecue for 10 minutes.
