POTATO AND SMOKED HADDOCK CHOWDER

- 3 potatoes, cut into 2cm pieces (e.g. Rooster potatoes) (approximately 375 g)
- 15 g butter
- 500 g (frozen) mixed vegetables (carrot, onion, celery, leek)
- 175 ml chicken stock
- 300 ml semi-skimmed milk
- 198 g tin sweetcorn, drained
- 375 g smoked haddock cut into 2.5 cm pieces

- Melt the butter in a large saucepan and add the mixed vegetables, stock, and milk, bring to the boil. Add the potatoes and simmer for 10 minutes.
- Add the sweetcorn and haddock and cook for a further 5 minutes, season to taste. Ladle into 4 bowls and top with cheese.
