POTATO AND SMOKED HADDOCK CHOWDER
Ingredients for 4
3 potatoes, cut into 2cm pieces (e.g. Rooster potatoes) (approximately 375 g)
15 g butter
500 g (frozen) mixed vegetables (carrot, onion, celery, leek)
175 ml chicken stock
300 ml semi-skimmed milk
198 g tin sweetcorn, drained
375 g smoked haddock cut into 2.5 cm pieces

POTATO AND SMOKED HADDOCK CHOWDER
Cooking time:
25 MIN
Melt the butter in a large saucepan
Add the mixed vegetables, stock, and milk, bring to the boil.
Add the potatoes and simmer for 10 minutes.
Add the sweetcorn and haddock and cook for a further 5 minutes
Season to taste.
Ladle into 4 bowls and top with cheese.
