ROOSTER FRIED POTATOES WITH ROASTED PUMPKIN SEEDS AND CORIANDER

Ingredients for 4

  • 8 Rooster potatoes (approximately 1 kg)
  • 3 tbsp olive oil
  • 30 g roasted pumpkin seeds
  • A few leaves fresh coriander
  • Sea salt and pepper

A very simple recipe to appreciate new season potatoes at their true value, just browned.

  1. Wash and dry the potatoes and cut them into wedges.
  2. Heat the olive oil in a frying pan and add the potato wages.
  3. Stir with a wooden spoon, coating the potatoes with oil. Season to taste.
  4. Cook over a high heat for 4 to 5 minutes, stirring occasionally.
  5. Put on a lid and continue cooking over a low heat, for 20 minutes until the potatoes are tender and golden brown.
  6. Roast the pumpkin seeds in a dry pan until brown.
  7. Sprinkle the potatoes with the toasted pumpkin seeds and mix well.
  8. Sprinkle with coriander just before serving.
